Cali Today News - Một câu hỏi đơn sơ, nhưng hóc búa đối với nhiều người hoặc đă ghiền phở, hoặc muốn nếm thử lần đầu món “thực phẩm vua” của VN, nhất là người ngoại quốc.

Tại Hà Nội ngày nay, ai cũng biết tô phở ngon phải t́m trong các nhà hàng “cực ngầu”, nhân viên “cực hung dữ” và hàng người xếp hàng đợi dài lê thê. Xung quanh toàn cảnh càng ít “hoành tráng” th́ càng tốt.
Phở có lẽ xuất hiện ở miền Bắc VN khoảng 100 năm về trước. Nó chỉ là tập hợp của bánh bằng bột gạo, nước dùng và thịt ḅ, nhưng đă chinh phục cả thế giới, làm đảo điên các chủ bếp người Pháp khó tính nhất và làm thổn thức các sinh viên Hoa Kỳ ít đô trong túi quần nhất.

Nhà văn Nguyễn Tuân từng nói ăn phở phải tiến hành nghi thức như một thứ đạo, “đạo phở”. Trần Văn Hùng, một “tín đồ đạo phở”cho hay từ 20 năm nay ông “hành đạo” không nghỉ trước quán Phở Th́n ở Hà Nội.

Ông nói: “Nhân viên bao giờ cũng…nhẫn tâm với tôi, nhưng mặc, tôi quen rồi. Tôi đă được nuôi lớn từ hương phở “lưu luyến người đi” ở đường Ḷ Đúc ở Hà Nội”.

Phở kết nối mọi người Việt, dù trai gái già trẻ bé lớn mập ốm giàu nghèo. Họ thường ăn phở ở tiệm quen, giá hiện nay ở chỗ b́nh dân khoảng 1 đô la một tô. Giá “hoành tráng”? Khoảng 40 đô/tô.

Phạm Ánh Tuyết, một đầu bếp, cho biết: “Phở là sản phẩm thuần túy VN, chả có lai với ai cả, độc nhất và rực sáng nhất trong các món ngon nhà bếp của dân Việt”.

Chị Tuyết nói: “Bánh phở phải được tuyển kỹ, thật tươi, quá 4 giờ là hỏng, gừng phải nướng một tị, nước dùng là từ xương ḅ hầm nhừ, nấu trên lửa nhỏ ít nhất trong ṿng 8 giờ. MùI phở đến từ nồi nước hầm này”.

Mùi phở này là mùi…đạo, vướng phải mùi là phải hành đạo. Rất độc: không có quốc gia nào nấu phở ngon như người Việt nấu. Chân lư quá rơ: nước Việt c̣n, phở c̣n (hay ngược lại cũng rứa!)

Mới đây một người Pháp c̣n khen phở là món “cổ điển mà thanh lịch”, cụ Nguyễn Tuân chắc phải gật gù nơi chín suối….

Phở ỡ Vn nấu như con cặc! Bột ngọt cả đống!

Phở là từ miền Bắc, vậy nôm na là của CS. Vậy mấy bác chống cộng ăn phở có nuốt trôi không vậy. Hay là ăn phở mà bị mắt nghẹn hehehehe

Mai mốt mày vô nhà hàng nhớ gọi cho 1 tô VC nhe. Nhà hàng nó đập vô đầu mày 1000 cái tô. Thằng ngu.
